Last RX + Eating Healthy for Good Health, NOT Weightloss

Hello friends!

It has now been a month since I began working with Green Giant and Dr. V to clean up my diet by adding more veggies and less sugar. It has been such a wonderful experience and I have had great results. Not only have I been eating better, but I have had a few breakthroughs with my family as well! Luckily, Levi is a major lover of veggies, so he wasn’t the issue. My husband on the other hand is not a big fan of healthy eating. If it was up to him, he would eat meat, potatoes, corn dogs or macaroni and cheese every night of the week. And you know what’s even more annoying? He is still thin! If I was to eat like that I would seriously weigh 400 lbs! So I have really been trying to get him to eat better, obviously not to loose weight, but to be all around healthier. The verdict: I have gotten him to eat more veggies, admit that he likes ground turkey, and have tricked him with skinny desserts. WIN!

As for me, I have really made it a point to eat some type of vegetable with every dinner I make regardless of what it is. I have been loving big salads, Green Giant steamers (so quick!), and sweet potatoes from the garden. When I make spaghetti or a casserole, I’ll eat my salad first and then end up eating a much smaller portion of the main dish. Or I can have a small piece of chicken and eat as many Green Giant steamed vegetables on the side as I want!

As for the sugar and baking, I haven’t done wonderful, but have definitely improved. I have really cut back on sugar during the day and have been using less sugar, butter and flour when I do bake. I have been experimenting with greek yogurt, rice flour and corn starch (to make gluten free treats!), and Truvia. I still really need to work on my crazy sugar addiction, but am happy that I have made progress!

I got my final RX from Dr. V, and once again she is spot on with her thoughts and advice. And before I get into what she said, I just wanted to take a sec to thank her for all the feedback she has given me! I mean girl is a celebrity and has taken the time to actually read through our posts and give us advice…How awesome is that?!

Over the last month I have definitely changed my opinion on vegetables. I have been experimenting with them in ways that I hadn’t before, and am enjoying them so much more. It can be hard, but I am starting to view them more as a way to “get more” and not as simply a tool for weight loss. So yay for veggies!
